SAMPLE RECIPE:
Dinner 17: Crab Stuffed Flounder with Mayo, Capers, Olives
Flavorful crab meat elevates flounder in this low-carb dinner that's fit for kings and queens. Nutritious, delicious, and punctuated with bold flavors.
Ingredients:
- 3 fresh flounder filets
- 2 cups precooked lump crab meat
- 1 Tb olive oil
- 1 Tb mayonnaise
- 1 clove garlic, diced
- 1/2 cup minced onion
- 1 tsp lime zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 cup almond or coconut flour
- 1/4 cup Parmesan cheese
- 2 Tbs capers
- 1 cup black olive slices
- 1/2 cup fresh chopped cilantro
- Juice of 1 lime
- Salad greens
- Vinaigrette made with equal parts olive oil, vinegar, and a pinch of salt, oregano, and garlic powder.
To Make:
In a bowl, combine crab meat, olive oil, mayo, onion, garlic, lime zest, Parmesan cheese, salt and pepper. Mix well. Gradually stir in almond flour a bit at a time, checking for loose consistency. (You don't want this to become too firm - it's supposed to be mostly crab.)
Sprinkle in cilantro, capers and olive slices. Toss gently.
Rinse flounder filets and pat dry. Butter a baking tray and lay the flounder filets on top. Spoon some of the crab stuffing into the middle of each flounder filet. Carefully roll and secure with toothpicks.
Bake in a preheated, 350-degree oven for about 15 minutes. Serve on a bed of fresh greens tossed in vinaigrette.
